If you want it even more colourful, you can add more vegetables to the soup as you like. Thus, the vegetable soup with turkey can also be used to use up vegetable leftovers from the refrigerator.

1 Zucchini
300 grams turkey breasts
1 onion
1 garlic clove
1 Tbsp olive oil
700 milliliters Vegetable broth (Instant powdered)
1 pkg Soup vegetables (frozen)
1 sprig thyme
oregano (1 spring)
rosemary (1 sprig)
1 Tbsp grated Parmesan
2 Tbsps finely chopped Basil

Preparation steps

1.

Rinse and dry zucchini, cut into small cubes. Cut meat into small pieces. Peel onion and garlic and chop finely.

2.

Heat oil in a pot. Saute onion and garlic briefly. Add meat and cook for a few minutes. Add broth and simmer on low heat for about 5 minutes. 

3.

Add zucchini cubes, soup vegetables and herbs. Simmer, covered, for about 15 minutes. Sprinkle with Parmesan and basil and serve.
