Preparation steps

1.

Peel the carrots and kohlrabi. Chop the kohlrabi and slice the carrots. Rinse the snow peas. Cook all three of the vegetables separately in lightly salted water, then drain and rinse with cold water.

2.

Mix together the vinegar, salt, pepper and olive oil. Peel the onion and chop finely. Stir together with the herbs. Mix the everything with the vinaigrette. Grate the parmesan and set aside. When ready to serve, sprinkle over the vegetable salad and serve.
