- 1 Tbsp vegetable oil
- 1 Tbsp sesame oil
- 1 large carrot (shredded)
- 1 red pepper (thinly sliced)
- 2 cups firm Tofu (chopped)
- 2 cloves garlic cloves (minced)
- 2 Tbsps fresh cilantro (chopped)
- Fish sauce (may use regular salt)
- 8 sheets Spring roll dough sheet
- 8 fresh Basil
- Oil (for frying)

Preparation steps
1.
Heat oil in a skillet. Saute the carrot, red pepper, and tofu for about 5 minutes. Add in the garlic and the cilantro and continue to cook for another minute or 2. Add a dash of fish sauce and stir to incorporate. Remove from heat and let cool.

On a clean surface, lay out a fresh spring roll sheet and begin filling with some of the cooled vegetable mix. Add a fresh basil leaf and roll and fold edges, using warm water to act as glue to seal the roll. Repeat with the remaining ingredients.
3.
In a deep pan, fry the spring rolls until they are golden. Serve warm.
