- 200 grams Barley
- Bell pepper (1 large red and 1 large yellow)
- 2 small Zucchini
- 250 grams Oyster mushrooms
- 1 ½ liters Vegetable broth (Instant)
- salt
- peppers (from the mill)
- Nutmeg
- 1 bunch parsley

Preparation steps
1.
Soak the barley overnight in cold water.

The next day, rinse and halve the peppers, remove the seeds, remove all white interior skins and cut into small diamonds.

Rinse and slice zucchini.
4.
Cut the oyster mushrooms into small pieces.
5.
Boil the drained barley with the vegetable broth and cook for about 45 minutes over low heat. Add the prepared vegetables, salt, pepper and nutmeg, cover and cook for 15 more minutes. Season to taste.
6.
Rinse and shake dry the parsley, chop the leaves finely, add to the soup and serve.
