350 grams Basmati rice (cooked)
2 Chicken breasts (shredded)
1 Red onion
2 carrots
100 grams frozen Peas
salt
peppers (freshly ground)
cayenne pepper
4 Tomatoes (ripe)
200 milliliters chicken stock
1 garlic clove
olive oil (cold pressed)
2 Limes (juice)

Preparation steps

1.

Rinse tomatoes, blanch, peel and cut into large pieces. Peel onion and cut into wedges. Peel carrots and cut into slices. Peel garlic. Heat 2 tablespoons of oil in a large pan and saute onion until soft. Add chicken and saute together. Add tomatoes, garlic and carrots.

Cover and simmer for about 15 minutes. 5 minutes before the end of cooking stir in peas. Season with salt, pepper and cayenne pepper. Combine with rice, mix well. Drizzle with lime juice. Season with more salt if necessary. Serve immediately.
