300 grams starchy potatoes
2 handfuls Stinging nettle
40 grams dried Tomatoes (in oil)
2 sprigs parsley
2 sprigs thyme
1 garlic clove
1 shallot
100 grams Vegan quark
2 Tbsps olive oil
2 Tbsps Soy flour
1 tsp Baking powder
salt
freshly ground peppers

Preparation steps

Rinse potatoes and evenly steam about 30 minutes.

Preheat oven to 180°C (approximately 350°F.)

Rinse nettles, shake dry, pluck and chop coarsely. Drain tomatoes and cut into strips. Rinse parsley and thyme, shake dry, pluck and finely chop. Peel garlic and shallot, finely chop both and place in bowl. Press peeled potatoes through rice press and let dry. Mix pressed potato with oil, soybean flour and baking powder. Add in nettles, tomatoes and herbs and season well with salt, pepper and nutmeg. Spread mixture into 4 ramekins and bake in oven for about 20 minutes. Overturn potato bake from ramekins and serve with cucumber salad as desired.
