- 2 cloves garlic cloves (halved)
- 3 cups russet potato (peeled and thinly sliced)
- 3 Plum tomato (rinsed and cut into large pieces)
- ¼ tsp dried Tarragon
- ¼ tsp dried Basil
- 1 ½ Tbsps roughly chopped, fresh parsley (separated)
- kosher salt (to taste)
- peppers (to taste)
- ¼ tsp grated Nutmeg
- 2 Tbsps unsalted butter
- 1 cup Parmesan (coarsely grated)

Preparation steps
1.
Preheat oven to 400° F / 200º C. Grease a 12x8-inch or similar size casserole dish and rub all over with the cut garlic. Reserve the garlic and mince.
2.
In a small bowl, combine tarragon, basil, 1 tablespoon parsley and minced garlic; mix well.
3.
In prepared casserole dish, layer potatoes, a sprinkling of the herb mixture, salt, pepper, a little nutmeg and then tomatoes. Repeat layering.
4.
Dot with butter. Bake, tightly covered, for 1 hour, or until potatoes are just tender. Remove cover, sprinkle with the grated cheese and bake, uncovered, until cheese is melted, about 5 more minutes.
5.
Let rest 10 minutes and sprinkle remaining parsley on top before serving.
