250 grams Basmati rice
Rice
1 garlic clove
2 centimeters fresh ginger
1 Tbsp vegetable oil
2 Tbsps yellow Curry paste (vegan)
1 tsp ground Turmeric
1 tsp crushed Coriander
200 milliliters Vegetable broth
400 milliliters Coconut milk
2 Curry leaves
2 Mangoes
2 green Bell pepper
2 Banana
1 Tbsp light soy sauce
Chili powder
to garnish
Coconut flakes
Chili thread
cilantro (with root)

Preparation steps

Rinse the rice in a sieve and cook for 25 minutes in twice the amount of salt water that the package instructions require.

For the curry, peel and chop the garlic and ginger. Saute in hot oil until translucent. Stir in the curry paste, turmeric and coriander seeds. Add the broth and coconut milk. Add the curry leaves and allow to simmer for 10 minutes until creamy.

Peel, core and dice the mangos. Rinse, halve and cut the peppers into strips. Peel the bananas and slice. Stir the peppers, bananas, mangos, and curry sauce for 3-4 minutes until well mixed. Season with the soy sauce and chile powder. Divide the rice and fruit curry into bowls.

Serve garnished with coconut flakes, chile strips and cilantro.
