- For the apple compote
- 800 grams tart Apple
- 125 milliliters Apple juice
- 1 thin piece lemon (zest)
- 2 Tbsps honey
- cayenne pepper
- For the Vanilla Mascarpone
- 40 grams Almond slivers
- 150 grams Mascarpone
- 2 Tbsps Whipped cream
- 2 Tbsps honey
- ½ tsp ground Natural vanilla
- 2 tsps lemon juice
- 1 Banana
Preparation steps

To make apple compote: Peel, quarter and remove cores from apples, then cut into eighths. In a pot, combine apples with apple juice and lemon zest. Bring to a boil, cover and cook over medium heat until al dente. Remove about half of the apples.

Continue cooking remaining apples until soft. Puree apples. Mix in cooked apple pieces and season with honey and cayenne pepper. Let cool.

Toast almonds in a dry frying pan until golden-brown.

To make Vanilla Mascarpone: Mix mascarpone with cream, honey, ground vanilla and lemon juice. Finely dice banana and fold into mascarpone mixture.
5.
Arrange apple compote with vanilla mascarpone in bowls and serve sprinkled with slivered almonds.
