- For Tzatziki
- 1 english Cucumber (peeled)
- 1 cup plain Greek yogurt
- 1 cup Sour cream
- 3 cloves garlic cloves (peeled and minced)
- ½ Tbsp fresh Chives (rinsed and finely chopped)
- 1 Tbsp fresh Dill (rinsed and finely chopped)
- 1 Tbsp fresh parsley (rinsed and finely chopped)
- 1 Tbsp Champagne vinegar (or white wine vinegar)
- 2 Tbsps freshly squeezed lemon juice
- 1 Tbsp good-quality olive oil
- coarse salt (to taste)
- freshly ground peppercorns (to taste)
- For Hamburger
- 16 ozs lean Ground beef
- ½ tsp Worcestershire sauce
- 1 tsp dried parsley
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 cup crumbled Feta
- Oil (for grill grate)
- In Addition
- 1 cup shredded Cabbage (or prepared coleslaw)
- ½ green Bell pepper (rinsed; trimmed and chopped)
- 4 sesame Burger buns (split)

Preparation steps

For Tzatziki:

Finely chop 3/4 of the cucumber; place in a strainer and squeeze out any liquid. Place on paper towels and let sit for 15 minutes. Chop remaining 1/4 cucumber and set aside.

In a large bowl, combine yogurt, sour cream, garlic, herbs, vinegar, lemon juice and olive oil; mix well. Fold in finely chopped cucumbers. Cover with plastic wrap and refrigerate for at least 3 hours.

Prior to serving, garnish with salt, peppercorns and remaining chopped cucumber.

For Hamburger:

Preheat an outdoor grill for medium heat.

With clean hands, knead together the ground beef, Worcestershire sauce, parsley, salt, pepper and crumbled feta cheese in a bowl. Form the mixture into 4 equal-sized thin patties.

Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Arrange coleslaw and chopped peppers on the bottom of the bun. Place grilled hamburger on top and spoon a generous amount of tzatziki sauce over the top of the burger. Top with remaining bun half. Serve.
