- 200 grams Tuna steak (very fresh)
- 200 grams Salmon (very fresh)
- 1 scallion (only whites)
- 2 Tbsps grapeseed oil
- 2 Tbsps soybean oil
- 6 Tbsps lemon juice
- salt
- white peppers
- 1 tsp Curry powder
- cayenne pepper
- Leeks (for garnish)
- 1 Tbsp liquid honey
- 1 heaping tsp medium hot Mustard
- 1 Tbsp Crème fraiche
- 2 Tbsps Vegetable broth

Preparation steps

Cut tuna and salmon into small cubes and place tuna in one bowl and salmon in a second bowl. Finely chop scallions. Season salmon tartare with 3 tablespoons lemon juice, grape seed oil and 1 pinch salt. Add curry and white pepper and then stir in scallions. Season tuna tartare with 3 tablespoons lemon juice, soya oil, salt and cayenne pepper. Cover both bowls and let rest in the refrigerator.

For the honey mustard sauce, stir honey, mustard and curry together in a bowl with vegetable broth. Add crème fraîche, mix and season with salt, white pepper and cayenne pepper.

To serve, place tartare separately on plates using a metal ring and serve with the sauce.
