2 whole White fish
lemons (juice)
3 Tbsps butter
18 ozs Tomatoes
2 Zucchini (1 yellow and 1 green)
1 yellow onion
1 bunch parsley
1 bunch Dill
1 sprig Lemon balm
1 sprig thyme
2 Tbsps Double cream
1 Tbsp Herb mustard

Preparation steps

Rinse and pat dry inside and out. Season with salt and pepper and sprinkle with lemon juice. Brush 2 large pieces of foil with butter, and arrange fish in center of foil pieces. Blanch tomatoes in boiling water, rinse with cold water, peel and cut into slices.

Peel onion and cut into thin rings. Rinse herbs, chop finely, and set aside half. Rinse zucchini, cut in half lengthwise and cut into slices. Top fish with onion rings, then arrange tomato and zucchini on the fish and season with salt and pepper.

Sprinkle with herbs, seal the foil loosely, place on a baking sheet and roast in preheated oven for 30 minutes at 200°C / 400°F. For the sauce, mix remaining dill with cream and mustard. Serve the sauce over the fish and garnish with remaining herbs.
