Turkey Skewers with Vegetables
Ingredients
- For the skewers
- 400 grams turkey breasts
- 1 garlic clove
- 6 Tbsps vegetable oil
- 3 Tbsps lemon juice
- 1 tsp mild Curry powder
- 2 onions
- 2 thick slices Bacon
- salt
- Black pepper
- 4 small Tomatoes
- 4 Wooden skewers
Preparation steps
Cut the meat into equal, bite-sized pieces.
Peel garlic and press into a bowl. Mix 4 tablespoons oil and lemon juice well. Stir in curry powder and meat, cover and marinate 1 hour.
Rinse and peel tomatoes.
Peel the onions, cut in half crosswise and quarter lengthwise.
Cut the bacon into about the size of the meat pieces.
Remove the meat from the marinade, drain and blot with paper towels. Alternately thread meat with a slice of onion and bacon on skewers. Season with salt and pepper.
Cook the skewers on all sides in remaining oil 8-10 minutes.
Rinse peppers, cut in half, remove the seeds and ribs and cut into small pieces. Trim scallions, rinse and cut the white and light green in rings about 1 cm (approximately 1/2 inch) wide.
Heat oil in a pan and cook peppers and scallions while stirring. Season with salt and pepper, add the tomatoes and pour in the broth. Cover and cook 5 minutes. Remove the lid, increase the heat and let all liquid evaporate quickly.
Serve skewers with vegetables on plate.
