Ingredients

4 slices Farmhouse bread
2 Tbsps Mayonnaise
butter
2 scallions
½ organic lemon (zested and juiced)
1 Radicchio (or 3-4 leaves)
2 Tbsps olive oil
200 grams turkey breasts
½ tsp sweet ground paprika
salt
freshly ground peppers
2 hard-boiled eggs

Preparation steps

1.

Spread the butter over the bread. Rinse, trim and chop the scallions. 

2.

Coat the turkey with paprika and season with salt and pepper. Heat 2 tablespoons oil in a large frying pan and sear the turkey on each side for 3-5 minutes, until golden brown. Remove from the pan.

Add the scallions, lemon juice and lemon zest to the frying pan and sauté for 2-3 minutes, until softened.

Shred the turkey into thin strips.

Separate the radicchio leaves, rinse, shake dry and cut into fine strips. Peel the eggs and chop.

6.

Spread the mayonnaise over the bread. Top 1/2 of the bread with turkey meat, scallions, radicchio and eggs and season with salt and pepper. Sandwich together with the remaining bread. Serve garnished with chives.
