- 4 Turkey cutlets (each about 160 grams)
- 6 Tbsps Orange juice
- 3 Tbsps soy sauce
- 400 milliliters Chicken broth
- 150 grams brown Lentils
- 1 stalk Leeks
- 2 Tbsps Walnut oil
- 1 Tbsp White vinegar
- salt
- freshly ground peppers
- cayenne pepper
- 2 Tbsps vegetable oil

Preparation steps
1.
Whisk orange juice with soy sauce in a bowl and marinate turkey cutlets for 15 minutes.

Rinse lentils in a sieve under running water. Bring broth to a boil and add lentils. Simmer for about 40 minutes.

Rinse leek and cut white and light green parts into thin strips. Add leek to lentils about 10 minutes before the end of cooking and mix well. Remove from heat and cool slightly, stir in walnut oil and season with vinegar, salt, pepper and cayenne pepper.

Remove turkey cutlets from the marinade, pat dry and season with salt and pepper. Heat oil in a pan and cook turkey cutlets for about 3-4 minutes per side. Place warm lentils on plates, top with turkey cutlets and serve.
