400 grams turkey breasts
4 eggs
2 Tbsps Whipped cream
2 Tbsps butter
2 yellow Bell pepper
250 grams Cherry tomatoes
200 grams Pearl onion
2 Red Bell pepper
salt
freshly ground black peppers
½ tsp Curry powder
Red pepper flakes
6 Tbsps vegetable oil
2 handfuls mixed Lettuce (such as spinach, argula, beet greens)
3 Tbsps lemon juice

Preparation steps

Rinse the turkey breast, pat dry, and cut into thin slices.

Beat the eggs with the cream and season with salt and pepper. In an omelet pan, heat the butter and cook the eggs into an omelet. Remove from the pan and  and cut into bite-size pieces.

Rinse the peppers, cut in half, remove seeds, and cut into pieces. Rinse and halve the tomatoes. Peel the onions.

Wrap the turkey slices around the omelet cubes and thread on wooden skewers, alternating with onions, peppers, and tomatoes. Season with salt, pepper, curry and red pepper flakes.

In a sauté pan, heat 2 tablespoons oil and sauté on all side, about 4 to 5 minutes.

Rinse and spin dry the lettuce. Male a bed of the lettuce on plates and drizzle with the remaining oil and the lemon juice.

To serve, arrange the skewers on the salad and serve immediately. Accompany with a  yogurt dip if desired.
