- For the sashimi
- 125 grams Tuna steak (one piece)
- 1 Tbsp Sesame seeds
- 1 tsp fine Sea salt
- white peppers
- 1 Tbsp soybean oil
- For the mango salad
- 1 Red chili pepper (medium heat)
- 2 Tbsps coarsely chopped Shelled peanut
- 1 Tbsp Peanut oil
- ½ small Mango
- 1 generous pinch salt
- 1 Tbsp Mirin
- 1 Tbsp Rice vinegar
- scallions (for garnishing)

Preparation steps

Rub the tuna fillet with sesame seeds, salt and pepper. Heat the soybean oil over high heat and quickly sear the tuna on all sides. Remove and cover.

Rinse the chile and cut into rings, removing the seeds and stem. Heat the peanut oil over high heat and saute the peanuts. Peel the mango, remove the core and cut into 1 cm (approximately 1/2 inch) cubes. Add the diced mango to peanuts and stir to combine. Add the chilli rings and stir. Pour the mixture into a bowl. Season with salt, mirin and rice vinegar.

Slice the tuna fillet into 1 cm (approximately 1/2 inch) thick slices. Place a slice of sashimi on a plate and top with a spoon of warm mango salad. Sprinkle with chopped chives.
