- 11 ozs very fresh Tuna (skin removed and cut into 12 pieces)
- 2 Tbsps balsamic vinegar
- ½ Lime (juice)
- 3 Tbsps extra virgin olive oil
- Sea salt
- freshly ground Black pepper
- To garnish
- 1 oz Dark chocolate (85-90% cocoa solids, cut into small pieces)
- Rosemary blossom

Preparation steps
1.
Put the tuna pieces in a large bowl. Toss with the vinegar, lime juice, oil and a pinch of salt. Chill for 30 minutes.
2.
Season the tuna with salt and black pepper and place on a serving dish.
3.
Arrange the chocolate and rosemary flowers on top of each piece.
