- For the pasta dough
- 3 ⅓ cups all-purpose flour
- 5 eggs
- ½ tsp salt
- flour (for rolling out)
- For the filling
- ½ Cucumber
- 4 Tomatoes
- 2 ⅓ cups Tuna (in olive oil)
- 2 Tbsps green Olives (pitted)
- fresh Basil (according to taste)
- 5 Tbsps olive oil
- 4 Tbsps lemon juice

Preparation steps

Place the flour, eggs and salt in a bowl and mix. Knead the dough for about 15 minutes until smooth. Wrap in plastic wrap and leave for 1 hour to rest. Roll out thinly on a floured surface to 12 x 8 ins (30 x 20 cm) or use a pasta machine if preferred. Cut into rectangles.

Cook in boiling, salted water for 2 - 3 minutes until cooked, then remove and place on a paper towel to drain.

In the meantime, break the tuna into small-size pieces. Peel the cucumber, cut into quarters lengthways and chop. Wash, halve, de-seed and chop the tomatoes. Cut the basil into strips.

Mix the cucumber with the tomatoes, tuna, basil, olives, 3 tablespoons of olive oil and lemon juice. Season to taste with salt and pepper.

Place the cooked pasta sheets onto plates and drizzle some olive oil over the top. Put a few spoonfuls of tuna salad on the top and roll up. Season with salt and pepper and serve lukewarm or cold. Gernish with a few basil leaves.
