- 2 dried chili peppers
- 1 tsp black peppercorns
- ½ tsp Cardamom
- 1 tsp cinnamon
- 1 tsp black Mustard seed
- 1 tsp Fenugreek seed
- 28 ozs stewing Beef
- 3 Tbsps Ghee (or clarified butter)
- 4 onions (chopped)
- 3 garlic cloves (chopped)
- 1 walnut-sized ginger (chopped)
- 1 tsp Turmeric
- 2 tsps brown sugar
- 3 Tbsps lemon juice
- 1 bay leaf
- 8 sprigs cilantro (roughly chopped)
- 1 Banana leaf (approx. 30 cm long, washed, dried and cut into wide strips)

Preparation steps
1.
Grind the cumin seeds, chilli pepper, peppercorns, cardamom, cinnamon, mustard and fenugreek seeds in a blender.
2.
Place the meat in a bowl and stir in the ground spices.
3.
Heat 1 tbsp ghee in a skillet and fry the onions, garlic, ginger and turmeric on a medium heat for 2-3 minutes. Then puree in a blender along with the sugar.
4.
Heat 2 tbsp ghee in the skillet and fry the meat on a medium/high heat. Season with salt and remove from the skillet.
5.
Quench the meat juices with 400 ml water. Stir in the pureed onion mixture and the lemon juice and bring to a boil.
6.
Place the fried meat back in the skillet along with the bay leaf and stew on a low heat for 1 hour until the meat is tender.
7.
Stir the coriander in with the meat just before serving and season with salt and pepper.
8.
To serve, place the banana leaves on the plate and arrange the meat on top. Serve with chapatis or basmati rice.
