Tropical Fruit and Tomato Soup

Place the tomatoes in boiling water for a few seconds, then immediately into cold water. Peel off the skins and cut in half.
Heat the olive oil in a pan and saute the shallot and the garlic until soft. Add the sugar and stir in the tomato puree. Pour in the vegetable stock and the orange juice. Now add the tomatoes and simmer gently for about 10 minutes. Add more stock if required.
In the meantime peel the mango, remove the core and cut into cubes. Add to the soup and allow to warm. Season with salt and pepper.
Pour into soup bowls, garnish with sage leaves and serve.
