1 cup raisins
1 cup Orange juice (or sherry wine)
16 ozs Egg noodle (16 oz bag)
6 Tbsps butter (cut in pieces; plus extra for greasing pan)
4 large eggs
3 cups Cottage cheese
1 cup Sour cream
0.333 cup granulated sugar
1 tsp ground cinnamon
1 Tbsp freshly grated lemon zest

Preparation steps

Place raisins in a small saucepan and cover with orange juice or sherry. Heat over medium heat until liquid is steaming hot or about 3 to 4 minutes. Remove from heat and let cool.

Preheat oven to 400º F. Butter a 9 by 13-inch baking dish. Cook noodles according to package instructions; drain well. Immediately return noodles to pot and add butter. Toss until noodles are coated.

In a large bowl, whisk the eggs, cottage cheese, sour cream, sugar, cinnamon, and lemon zest together. Drain raisins and add to noodle mixture; mixing well to incorporate.

Spread mixture in buttered baking dish and smooth top. Bake until top is crusty and golden brown, about 25 to 35 minutes. Serve warm.
