1 kilogram crushed Tomatoes

2 bay leaves
2 Tbsps olive oil
2 Tbsps finely chopped Basil
4 Tbsps Crème fraiche

Preparation steps

1.

Peel and finely dice the onion and garlic. Heat the oil in a pan, and sweat both until translucent. Add the tomatoes and the spices, and simmer for 30 minutes. Add a little water if the soup becomes too thick.

Remove the bay leaves and puree the soup. Mix in the finely chopped basil, then pour into bowls. Garnish with a tablespoon of creme fraiche and some basil leaves, then serve immediately.
