Ingredients

For the meatballs
1 slice Toast (From the day before)
3 Tbsps Whipped cream
1 onion
3 Tbsps olive oil
600 grams Ground meat (Pork or veal)
1 egg
1 generous pinch lemon zest (untreated)
salt
peppers (from the mill)
2 Tbsps Pastry flour
For the tomato sauce
1 shallot
1 garlic clove
400 grams lumpy Tomatoes (socket)
2 Tbsps olive oil
salt
peppers (from the mill)
1 pinch sugar
freshly cut Basil (for garnish)

Preparation steps

For the meatballs,  pour the cream over toast  and soak briefly. Peel the onion, chop fine and saute in 1 tablespoon of oil until soft.   Mix the ground beef with the egg, toast, onion and lemon zest in a bowl, season with salt and pepper and knead well. Form small balls of the mixture and coat lightly with flour.

For the tomato sauce, peel the shallot and garlic and chop fine. Saute in olive oil until soft. Add the tomatoes and simmer for about 15 minutes, stirring occasionally.  Add a bit of water for desired consistency. Season with salt, pepper and sugar.

Fry the meatballs until golden brown around 5-6 minutes in a pan in with the remaining oil.

Pour sauce over the meatballs and serve. Garnished with basil.
