1 kilogram Tomatoes
100 grams Bacon (diced)
2 shallots
2 garlic cloves
6 oregano
1 rosemary
2 fresh bay leaves
200 milliliters Vegetable broth
2 Anchovy fillet
2 Tbsps olive oil

Preparation steps

1.

Blanch the tomatoes in boiling water then remove. Peel, remove the cores, and coarsely chop.

Peel and finely chop the shallots and garlic.

Remove the leaves from the oregano and rosemary, then coarsely chop.

Sauté the bacon in the oil. Add the shallots, garlic, and anchovies. Sauté briefly, then pour in the broth. Add the tomatoes, and simmer for 40 minutes. Add the herbs during the last 10 minutes of cooking. Season to taste with salt, pepper, and sugar. Fill in the prepared jars and seal tightly. The sauce will last for 1 month.
