- 800 grams Tomatoes
- 1 onion
- 2 garlic cloves
- 1 red Bell pepper
- 2 Tbsps olive oil
- 4 allspice
- 1 bay leaf
- 1 cloves
- 2 sprigs parsley
- 1 sprig Lovage
- 4 Tbsps brown sugar
- 1 tsp mustard powder
- 100 milliliters Wine vinegar
- salt
- cayenne pepper

Preparation steps

Rinse the tomatoes, remove the cores, and coarsely chop. Peel and finely dice the onion and garlic. Rinse and halve the pepper. Remove the seeds and finely dice.

Heat the oil in a pan, then sauté the garlic, onion, and peppers. Mix in the allspice, bay leaf, and cloves. Sauté briefly, then add the tomato and simmer for 15 minutes. Add the herbs, sugar, mustard powder, and vinegar. Simmer another 10-15 minutes until thickened. Pass through a fine strainer, bring to a boil, then season to taste with salt and cayenne pepper. Pour the ketchup into a bottle, seal tightly, and cool completely.
