700 grams ripe Tomatoes
100 grams sun-dried Tomatoes (in oil)
1 onion
2 garlic cloves
1 red Bell pepper
4 allspice
1 bay leaf
1 cloves
1 sm piece Cinnamon stick
4 Tbsps brown sugar
1 tsp mustard powder
100 milliliters Wine vinegar
salt

Preparation steps

Rinse the tomatoes, remove the core, and coarsely chop. Drain the sun-dried tomatoes, reserving the oil. Peel the onion and garlic. Finely dice the onion, and slice the garlic. Rinse and halve the pepper. Remove the seeds and finely dice. Crumble the bay leaf and add to a piece of cheesecloth or spice bag with the clove, cinnamon, and allspice.

Sweat the onion, garlic and pepper in 2 tablespoons of the sun-dried tomato oil. Add the tomatoes and sun-dried tomatoes, and sauté briefly. Add the spice bag, and simmer for 15 minutes. Mix in the sugar, mustard powder, and the vinegar. Simmer an additional 15-20 minutes until the sauce begins to thicken. Remove the spice bag, then pass the sauce through a fine strainer into a bowl. Transfer to a pan, return to a boil, then season to taste with salt and cayenne pepper. Pour into sterilized, hot bottles. Seal tightly and cool completely.
