- 3 kilograms Tomatoes
- 2 garlic cloves
- 2 shallots
- 3 bay leaves
- 1 tsp ground ginger
- 1 tsp ground allspice
- 1 tsp peppercorns
- 500 milliliters Vinegar
- 2 Tbsps sugar
- salt

Preparation steps

Rinse and roughly chop the tomatoes.

Peel and chop the shallots and garlic.
3.
Simmer the tomatoes in a pot for 5 minutes, then add the shallots and garlic and cook another 5 minutes. Add the bay leaf, ginger, allspice, peppercorns, 2 tablespoons of salt, sugar and vinegar. Cook for 10 minutes, then reduce the heat and simmer until it has a creamy consistency. Pass through a sieve and pour back into the pot. Season to taste. Fill while hot into bottles or jars. Close the bottles or jars. Those who like it hot can season with cayenne or Tabasco.
