800 grams ripe Tomatoes
1 shallot
1 garlic clove
2 sprigs finely chopped Lemon thyme
1 sprig finely chopped oregano
4 tsps olive oil
salt
1 tsp sugar
freshly ground peppers
1 generous pinch Chili powder
½ diced Mozzarella
fresh oregano (for garnish)

Preparation steps

Rinse tomatoes and dice. Peel shallots and garlic, chop finely and sauté in 2 teaspoons of oil. Add tomatoes and herbs and cook briefly. Add about 150 ml (approximately 2/3 cup) of water and continue to simmer about 10 minutes. Puree soup and pass through a fine mesh sieve. Season with sugar, chile powder, salt, and pepper. If possible, reserve in the refrigerator overnight to enhance flavors.

To serve, stir well and season again to taste. Ladle into glass bowls if desired. Drizzle remaining olive oil and garnish with 1 to 2 mozzarella cubes and oregano leaves.
