Preparation steps

Soak the mushrooms in 200 ml (approximately 7 ounces) of warm water for 30 minutes. Reserve the soaking liquid and chop the mushrooms. Blanch the tomatoes in boiling water, then remove. Peel, seed, and finely dice. Peel and finely chop the onions and garlic.

Heat the oil in a saucepan. Sauté the onion, garlic and bay leaf. Add the tomatoes, tomatoe paste, and the mushroom soaking liquid. Simmer over low heat for 15-20 minutes. Add the chopped mushrooms, and remove the bay leaf. Season the sauce to taste with the thyme, salt, and pepper. Simmer for another 10 minutes, then serve with fresh pasta or gnocchi.
