- 1 scoop Mozzarella
- 1 ripe Avocado
- 2 Tbsps lemon juice
- ½ bunch Arugula
- 8 Cherry tomatoes
- 2 Tbsps White vinegar
- 2 tsps balsamic vinegar
- ½ tsp Mustard
- 1 pinch sugar
- salt
- freshly ground peppers
- 4 Tbsps olive oil

Preparation steps
1.
Cut mozzarella into slices.
2.
Halve avocado, remove pit and scoop out flesh. Cut avocado into thin slices and immediately sprinkle with lemon juice.
3.
Rinse and halve cherry tomatoes. Rinse arugula, shake dry and tear into bite-sized pieces.
4.
Whisk together both types of vinegar, mustard and sugar. Season with salt and pepper to taste and whisk in oil until emulsified. Stir in finely chopped basil leaves.
5.
To serve, divide salad ingredients among plates and drizzle with dressing.
