- 2 Tbsps olive oil
- 1 clove garlic cloves (peeled and finely chopped)
- salt (to taste)
- freshly ground Black pepper (to taste)
- ½ Tbsp fresh thyme (finely chopped)
- 4 slices crusty Bread
- ¾ cup smoked Mozzarella (thinly sliced)
- 1 ripe Tomato (washed; trimmed and thinly slice)

May substitute mozzarella with Swiss, Gruyere, Cheddar or your favorite cheese.
Preparation steps
1.
In a small bowl, combine olive oil, garlic, salt, pepper and chopped thyme. Lightly brush 2 slices of bread with half of the oil mixture.

Heat a skillet over medium heat.

Place sliced mozzarella on the side of the bread that does not have the oil, followed by a layer of tomato slices. Brush the remaining two slices of bread lightly with the oil mixture and place oil side up on top of the tomato to make a sandwich.
4.
Place the sandwich in the pan, oil side down, and cook for about 2 to 4 minutes, or until the side touching the pan is golden brown. Turn the sandwich over, reduce heat to medium-low and continue cooking until the cheese is melted and the turned side is nicely browned.
5.
Cut each sandwich in half and serve immediately.
