8 black Olives (pitted)

Preparation steps

Rinse tomatoes, remove stalks and cut into small pieces. Drain mozzarella and cut into small pieces. Cut bacon slices in half. Cut ciabatta rolls in half horizontally and drizzle cut sides with a little oil and season with salt and pepper. Cover each bread half with tomato and mozzarella and sprinkle each with a large pinch of oregano.

Place bread halves under a preheated oven broiler, watching carefully, for approximately 5 minutes until crispy. Meanwhile fry bacon in a frying pan. Place bacon on top of cooked toast and serve garnished with an olive. Serve immediately.
