- 12 ozs Boiled potatoes (sliced)
- 6 scallions (cut in half)
- 1 clove garlic cloves (chopped)
- 7 ozs Chorizo (cooking sausage)
- salt
- Black pepper
- 4 Flour tortillas
- 2 cups grated Cheese
- 4 Lettuce

Quesadillas should be served as soon as they are cooked, otherwise they will become chewy. They can be prepared in advance, filled and folded ready to cook.
Preparation steps
1.
Heat 2 tablespoons olive oil in a large frying pan and fry the garlic, chorizo and potatoes for about 5 minutes until lightly browned.
2.
Add the spring onions and cook for 1 minute. Season to taste with salt and pepper.
3.
Divide the mixture between the tortillas and sprinkle with the cheese. Add the lettuce leaves and fold over the tortillas to make a half moon shape.
4.
Brush the tortillas with a little of the remaining oil.
5.
Heat a dry frying pan and cook the tortillas until the cheese has melted. Serve immediately.
