- 2 slices fresh, top quality Tuna (about 225 g | 8 oz each)

- freshly ground Black pepper
- freshly squeezed lemon juice
- For Vinaigrette
- 1 clove garlic cloves (crushed)
- ¼ tsp hot Mustard
- 1 Tbsp Red wine vinegar
- 2 Tbsps olive oil
- 4 slices toasted Sourdough
- 1 large, ripe Tomato (rinsed and sliced)
- 1 handful Lettuce
- salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

Preheat a gas grill or broiler or prepare a hot fire in a charcoal grill. Away from the heat source, lightly coat the grill rack or broiler pan with nonstick cooking spray. Position the cooking rack 4 to 6 inches from the heat source.

Season the tuna with salt and pepper and drizzle with lemon juice. Place the tuna on a grill rack or broiler pan. Grill or broil until the fish is pink and opaque throughout when tested with the tip of a knife, about 2 to 3 minutes per side. Season the tuna with salt and pepper and drizzle with lemon juice and leave to cool slightly.

In a small bowl, combine garlic, mustard, vinegar, and olive oil; whisk to incorporate. Brush one side of each bread slice lightly with vinaigrette.

Arrange the tuna, sliced tomato and lettuce leaves on two slices of bread; season to taste with salt and pepper. Drizzle with vinaigrette and cover with the remaining bread slices. Cut sandwiches in half and serve.
