2 Tbsps olive oil
2 small, skinless Chicken breasts (sliced)
12 slices white Bread
cup Mayonnaise
¾ cup Cheddar cheese (sliced)
½ cup baby gherkins
½ round Lettuce (leaves separated)
3 Vine Tomatoes (cored and sliced)
4 slices cooked ham
salt
freshly ground Black pepper

Preparation steps

1.
Heat the oil in a large frying pan set over a moderate heat until hot.
2.
Season the chicken with salt and pepper and fry for 8 - 10 minutes until golden and cooked through.
3.
Meanwhile, toast the slices of bread under a hot grill or in a toaster.
4.
Spread eight of them with mayonnaise and top half of those with cheese and gherkins. Follow with the cooked chicken and then lettuce.
5.
Place the four slices of toast with mayonnaise on top of the lettuce, mayonnaise-side down. Top those slices of toast with tomato, ham, and more lettuce.
6.
Spread the last four slices of toast with mayonnaise and place them, mayonnaise-side down, on the lettuce.
7.
Cut in half before serving with any remaining mayonnaise on the side.
