Toast with Blue Cheese, Pear, and Radicchio
These delicious toasts are a good source of protein and calcium from the blue cheese and minerals like copper and zinc from the radicchio.
If you don't have pears, apples are a good substitute.
Cut the bread slices in half and toast. Rinse, trim and cut the radicchio into thin strips. Heat the olive oil in a pan, toss the radicchio in it briefly, sprinkle with powdered sugar, caramelize slightly and then spread on the slices of toast.
Peel the pear, cut into quarters, remove the core and mash together with the cheese using a fork. Season with salt and pepper, spread on the toast slices and serve sprinkled with walnuts.
