- 4 Pear (cut into 5mm|1/4-inch thick slices)
- 1 Tbsp lemon juice
- 3 Tbsps packed light brown sugar
- 4 ½ tsps Corn starch
- ½ tsp salt
- ¼ tsp freshly ground Black pepper
- ¼ tsp whole cloves
- ⅛ tsp ground cinnamon
- ½ cup chopped Walnut
- 1 Pie crust
- 4 ozs Blue cheese
- fresh thyme (for garnish)

Preparation steps
1.
Preheat oven to 425° F/220º C. Line a cookie sheet with parchment paper.

In large bowl, toss pears, lemon juice, brown sugar, cornstarch, salt, pepper, cloves and cinnamon. Add in walnuts, reserving some for garnish.

Roll out pie crust and place onto cookie sheet. Spoon pear mixture onto center of crust, spreading to within 2 inches of edge. Dot blue cheese pieces over pears. Fold edge of crust up over pears.
4.
Bake 30 minutes or until crust is golden brown. Cool slightly, about 15 minutes. Garnish with reserved walnuts and a sprig of fresh thyme. To serve, cut into wedges.
