Preparation steps

Cut as large of a star as possible from the slices of bread then cut a 4-5 cm (approximately 2-inch) star from the center of each slice. Working in batches, toast the bread stars in hot butter in a large pan. Add 1 egg to each star, season with salt and pepper and cook over low heat.

Serve the toad-in-the-holes on serving plates garnished with herbs and salad.
