Thin Vegetable Chips
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
Slice the vegetables very finely, using a mandoline or a vegetable peeler. Place on absorbent kitchen paper to soak up any moisture.
Toss the vegetables with a spray of oil and seasoning to taste.
Place on the baking tray in a single layer and spray again with oil.
Cook for 10-20 minutes until golden. Some vegetables may be cooked sooner than others. Drain on absorbent kitchen paper and leave to cool.
