- ⅔ cup butter
- ⅔ cup light brown sugar
- 2 Tbsps honey
- 2 ½ cups rolled oats
- ¾ cup chopped Pistachio
- 1 cup chopped, dried Apricot (ready to eat)
- For the icing
- 2 cups powdered sugar
- water
- To decorate
- chopped Pistachio

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm|8" square tin.
2.
Melt the butter, sugar and honey together in a large pan over a low heat. Remove from the heat.

Stir in the oats, pistachios and apricots
4.
Press evenly into the tin, smoothing with the back of a spoon. Bake for 30-40 minutes, until golden. Cool completely in the tin.
5.
For the icing: sift the icing sugar into a bowl and beat un just enough water until thick enough to coat the back of a spoon.
6.
Pour over the cake and spread evenly. Sprinkle with pistachios and leave to set. Cut into squares when set.
