0.333 cup soft dark brown sugar
¼ cup butter (cut into cubes)
3 Tbsps Milk powder
3 Tbsps Malt extract
¾ cup raisins
½ cup Hazelnuts (optional)

Bread maker method; 1 Put all the ingredients except the raisins and hazelnuts into the bread maker bucket. 2 Fit the bucket into the bread maker and set to the basic programme with raisin setting, if applicable. 3 Select a light crust and press start. 4 Add the raisins and nuts when the machine beeps or halfway through the kneading cycle.

Preparation steps

1.
Put the strong white and brown flours into a bowl and sprinkle on the yeast.

Add 1 tsp salt, sugar and butter. Rub the mixture together with your fingertips to incorporate the butter.

Put the milk powder into a jug with 300 ml warm water, then stir in the malt extract and mix together.
4.
Pour the wet ingredients into the dry and mix together to make a rough ball.
5.
Knead on a lightly floured surface for 10 minutes until smooth and elastic.
6.
Put into a greased bowl, cover with a greased plastic bag and leave in a warm place to rise until double ed in size. This will take 30-40 minutes.
7.
Remove the bag and punch down the dough. Add the raisins and hazelnuts if using.

Grease a 900 g | 2 lb loaf tin. Shape the dough into an oblong and put into the tin.
9.
Cover and leave in a warm place to rise until doubled in size. This will take about 30 minutes.
10.
Preheat the oven to 220°C (200° fan) 425F gas 7.
11.
Reduce oven temperature to 200°C (180° fan) 400F gas 6. Bake bread for 50 minutes until dark golden brown. To test to see if the loaf is ready upturn and tap the base - it should sound hollow.
