1 Kiwi (finely diced)
5 ozs Pineapple (finely diced)
1 cup Ghee
cup almonds (chopped)
2 Tbsps raisins
1 ½ cups Semolina
2 Saffron
2 Tbsps warm milk
Cardamom powder

Preparation steps

Add 9 ounces sugar to 4 ounces water in a saucepan and bring to the boil. Add the diced kiwi and pineapple and simmer for 5 minutes.

Heat 2 tbsp ghee in a saucepan and toast the chopped nuts until golden, then stir in the raisins. Remove from the pan with a slotted spoon and put to one side.

Add the semolina to the ghee in the pan and fry gently for around 3 minutes until golden. Pour over 34 ounces of boiling water and simmer gently for around 3 minutes. Add the rest of the sugar and the fruit and sugar mixture and cook for a further 4 minutes, stirring. Add the rest of the ghee, a tablespoon at a time, stirring continually, until the semolina is soft.

Dissolve the saffron in the milk. As soon as the semolina is cooked, add the nuts and raisins, a pinch of cardamom and the saffron mixture. Divide the mixture between 8 molds and leave to cool.

To serve, turn out of the molds and serve with vanilla cream if desired.
