- 3 Tbsps sesame oil
- 1 cup ground pork
- 2 cloves garlic cloves (crushed)
- 10 scallions (sliced)
- 2 Tbsps Chili bean paste
- 1 Tbsp fermented black beans
- 2 tsps powdered sichuan pepper
- 1 cup chicken stock
- 2 ⅔ cups Tofu (cubed)
- 2 tsps sugar
- 2 tsps light soy sauce
- 2 Tbsps Corn starch

Preparation steps
1.
Heat the oil in a large wok until smoking then fry the pork until browned all over.

Add the garlic and the spring onions and stir fry for 2 minutes. Stir in the chilli bean paste, black beans and Sichuan pepper and cook for 3 minutes then gradually add the stock.

Bring to a boil then turn down the heat and add the tofu. Gently simmer for about 5 minutes then stir in the sugar and soy sauce. Season with salt to taste.
4.
Mix the cornflour with a little water and stir into the dish. Simmer until thickened and serve with boiled rice.
