1 ¼ cups sticky rice
2 ½ cups unsweetened Coconut milk
5 Tbsps sugar
3 ripe Mangoes (peeled, flesh removed from the stone and sliced)

Preparation steps

1.
Soften the sticky rice in cold water for 12 hours overnight. The next day drain the rice and place in a pot with enough water so that it is covered by 1 cm. Bring to the boil then cover and cook on a low heat for around 20 min. The water should be totally absorbed by the rice. Remove the lid and allow the rice to cool.
2.
Place the coconut milk in a pot and stir in the sugar and three tbsp water. Bring to the boil, then remove from the heat, add the sticky rice and stir well.
3.
Arrange the sticky rice in bowls and serve with the sliced mango.
