2 Tbsps honey
2 Tbsps Rum
2 Tbsps melted butter
Lemon peel

Preparation steps

1.
Cut the pineapple straight across top and bottom, then peel, making sure all the brown “eyes” are removed. Cut into quarters lengthwise. Cut the hard core away from the quarters and cut each quarter in half lengthwise.

Push a wooden skewer through each piece. Mix the honey, rum and butter and brush the pineapple pieces with the mixture.
3.
Cook for 5 minutes on a hot barbecue or grill, turning occasionally. Cut the lemon peel into fine strips and scatter over the pineapple pieces.
