½ small Cantaloupe
½ small Charentais melon
1 pomegranate
1 pinch Curry powder (mild)
½ tsp fennel seeds
1 tsp ginger (finely diced)
2 Tbsps cane sugar
1 sprig Lemongrass
1 lemon (squeezed)

Preparation steps

Core, peel and cut melons into bite-size pieces.

Add lemongrass with 50 ml (approximately 1 2/3 ounces) of water, lemon juice, fennel and ginger in a pot and simmer gently about 5 minutes. Add sugar and curry powder to dissolve it, remove the lemongrass and set aside and let mixture cool. Finely puree 1/4-1/3 of melon pieces, add some water if needed and season with spices. Cut pomegranate in half, carefully detach the seeds and mix with fruit sauce along with the pieces of melon. Cool thoroughly until ready to serve. Arrange on plates and serve.
