Preparation steps

Rinse the tomatoes and cut from the middle into 4 slices. Use the rest tomato elsewhere.

Peel the onion and cut into thin rings. Cut the avocado cut in half, peel the skin, remove the pit and cut the pulp into slices. Sprinkle the avocado with a little lemon juice and salt.

Rinse the lettuce and shake dry. Rinse the cilantro, shake dry and coarsely chop the leaves. Peel the ginger and grate finely. Cut the surimi in pieces and pick apart into individual fibers.

Mix the surimi with the ginger, remaining lemon juice, soybean oil, coriander, and season with salt and pepper.

Cut the rustic rolls in half and lightly toast the cut surfaces on the grill (or toaster). Spread the bottoms of the roll with mayonnaise and place 1 lettuce leaf over each. Place the surimi salad over lettuce and top with avocado, tomato slices and onion. Cover with the top halves of rolls and serve.
