- ½ Lollo rossa
- 1 sm head Romaine lettuce
- 2 carrots
- 2 scallions
- 1 shallot
- 3 Tbsps Walnut oil
- 4 Tbsps apple cider vinegar
- 1 pinch sugar
- salt
- freshly ground peppers
- 2 handfuls mixed Fresh herbs (such as, curly parsley, sage, mint)
- 1 handful Daisy (for garnish)
Preparation steps
1.
Rinse and trim the lettuces and tear into bite-sized pieces. Arrange on plates.
Rinse and finely grate the carrots. Cut the scallions into small rings.

Peel and finely chop the shallot.
Mix the carrots, scallions and the shallot together.
For the dressing, mix the oil with the vinegar and season with sugar, salt and pepper.

Drizzle the dressing over the onion and carrot mixture and arrange everything on top of the lettuce leaves.
Rinse the herbs and shake dry. Scatter over the salad and serve garnished with the daisies.
