- 2 Tbsps lemon juice
- 1 Tbsp honey
- 2 large Avocados (pitted and diced)
- 1 ½ cups cherry Tomatoes
- 1 cup kalamata Olives
- 2 cups Feta (cubed)
- 2 cups Arugula
- salt
- freshly ground Black pepper
Preparation steps
1.
Whisk together the olive oil, lemon juice, honey, and seasoning in a mixing bowl until smooth.

Add the avocado, cherry tomatoes, olives, feta, and rocket. Toss well to coat.
3.
Lift the salad into bowls and serve.
